Nothing can beat a classic croque monsieur and here we’ve used a bloomer and ham from the Tesco Finest range. But the star of the show is the Tesco Finest gruyère, which comes from a dairy in the Swiss mountains. It’s expertly matured for a full-bodied, fruity flavour. The creamy béchamel sauce completes the ultimate toasted sandwich. Bon appétit!

For the béchamel
25g butter
20g flour
250ml semi-skimmed milk
1 tsp dijon mustard, plus extra for the sandwich
Fresh nutmeg
For the sandwich
12g butter
4 slices Tesco Finest stonebaked white crusty bloomer
75g Tesco Finest gruyère, finely grated
4 slices Tesco Finest roast dry cured ham

Wholegrain mustard
To make the béchamel, melt 25g of butter in a saucepan then add the flour and whisk for 1 minute. Slowly whisk in the milk and bring to the boil. Simmer, still whisking, until you have a thick sauce. Add the mustard, a grating of nutmeg, and season to taste. Set to one side.
Now for the sandwich itself. Preheat the grill, then melt the 12g of butter in a small saucepan or microwave, and brush over 2 slices of the bread. Toast the buttered side under the hot grill until golden and crispy. Turn over then top with most of the gruyère, all the ham and a layer of béchamel.
Spread dijon mustard on the remaining two slices of bread and place, mustard- side down, on the sandwich. Top the bread with the remaining béchamel and sprinkle over the rest of the gruyère.
Grill for 4-5 minutes until the béchamel is golden and bubbling. Keep an eye out
as béchamel can quickly burn. Serve with cornichons and wholegrain mustard.
